Heath Bars

Mix together and stir.  Bring to a boil for 3-05 minutes or until heavy looking:

1 cup butter
1 cup brown sugar

Have ready soda/club crackers filled into cookie sheet.  Pour syrup (above) over.  Place in oven at 350 degrees for 5 minutes.  Sprinkle thoroughly with chocolate chips.  Spread with knife.  Set awhile, then mark and cut into chips.

Cherry Mash Bars (Twin Bings)

1 cup sugar
2 T margarine
1/4 tsp salt
1/3 cup half-and-half or evaporated milk
1 cup  miniature marshmallows
1 cup cherry chips
1 cup chocolate chips
1 cup salted Spanish peanuts
1/2 cup peanut butter

Combine sugar, butter or margarine, salt and milk in 1 1/2 - 2 quart saucepan.  Boil over medium high heat for 5 minutes, stirring occasionally.  Stir in marshmallows and cherry chips.  Spread in 8" or 9" square pan which has been lined with waxed paper.

Melt chocolate chips with peanut butter in small saucepan over low heat, stirring constantly.  (I sometimes use a double boiler.)  Stir in peanuts.  Spread over cherry layer.  When cool, cut into squares.   If desired, refrigerate for faster setting.

Fudge Jumbles

"Using this recipe from Ina Welling, Julie Rasmussen won a 4-H blue ribbon at the Big Horn County Fair."

Melt over low heat, then set aside:

1-12 oz. package chocolate chips
1 can Eagle Brand Milk
3 T margarine
3/4 cup chopped nuts
1 tsp vanilla

Mix together:

1 cup margarine
2 eggs
1 tsp soda
2 cups brown sugar
2 1/2 cups flour
3 cups oats
1 tsp vanilla
1 tsp salt
1/4 cup peanuts

Cream margarine, sugar, eggs and vanilla. Add dry ingredients.  Mix together well.  Pour 1/2 of mixture into large cookie sheet, spreading with hands if necessary.  Cover with chocolate mixture.  Sprinkle remaining dough on top and bake at 350 degrees for 20-25 minutes.

Apricot Cake

Mix together:

4 eggs
1 quart apricots
1 1/2 cups oil
2 tsp cloves
2 tsp cinnamon
2 cups sugar
1 cup nuts
4 tsp soda dissolved in 1/2 cup water
4 cups flour

Pour into two 9 x 13" pans and bake at 350 degrees for 45 minutes.

Eagle Brand Ice Cream

8 eggs
1 1/2 cups sugar
1 cup Eagle Brand
1 large can evaporated milk
1 tsp vanilla
1 tsp lemon

Separate eggs.  Combine yolks, sugar and flavoring.  Stir.  Beat egg whites until stiff.  Stir egg yolk mixture into whites.  Pour into icre cream freezer.  Finish filling to the mark with milks.

Jam Cake

"A neighbor gave Ina this recipe and it has become a favorite."

1 cup butter
3 cups sugar
4 eggs
2 cups applesauce
1 T vinegar
1 cup any berry jam
4 cups flour
1 tsp ground cloves
2 tsp soda
1 tsp cinnamon
1 tsp nutmeg
1 cup chopped raisins
1 cup chopped nuts

Mix together, mixing raisins and nuts with flour before adding.  Pour into tube pan and bake on lower oven rack at 325 degrees for 2 1/2 hours or until done.

Ina's Goodies

Melt in double boiler:

1 14 oz. bag caramels
1 can Eagle Brand Milk
1/3 cup butter

When all is melted and blended, turn down heat until water stops boiling but stays warm.  Dip a marshmallow into the mixture, then drop into a bowl of Rice Krispies.  Drop on waxed paper and cool.  Takes 50-60 large marshmallows and about about 1 large box of Rice Krispies.

Cornbread

"Ina got this from her daughter Marietta.  This is served at Marie Callendar restaurants."

1 package yellow cake mix
1 cup yellow cornmeal
1 cup flour
3 T sugar
1 T baking powder
1 tsp salt
1/3 cup soft shortening
1 egg
1 cup milk

Prepare cake mix according to directions.  Save 2 cups for cup cakes, etc.  For cornbread, combine dry ingredients in bowl and mix well.  Cut in shortening until well-blended.  Beat egg and milk together; add to dry ingredients and blend slightly.  Add cake batter to cornbread mixture.  Blend.  Pour mixture into 2 9 x 9" greased pans.  Bake at 375 degrees 20-25 minutes.

Fried Rice

"Fern Taggart gave Ina this recipe years ago.  I've eaten it, so I know it's good."

COOK RICE THE DAY BEFORE USING!

3 T good cooking oil
1/2 cup cooked, finely chopped ham
3+ green onions, chopped
1 quart cold cooked rice
3 T soy sauce (I like omore)
1 egg

Fry the meat in the oil lightly.  Add onions, mushrooms (1 can, sliced), rice and soy sauce and continue frying for 10 minutes over low heat.  Add the well-beaten egg and continue to fry.  Stir all together and put in the oven.  Bake in moderate oven until warmed through
