Rhubarb Bread

2002 Cowley Cookbook

1 1/2 cup brown sugar
1 egg
2/3 cup oil
1 cup butter milk
1 tsp vanilla
1 tsp soda
2 1/2 cup flour + 2 T flour
1 1/2 cup diced rhubarb
1/2 cup nuts

Combine all of the above. Bake in 2-9" pans. Top with (half on each):

1/2 cup sugar
1 tsp cinnamon

Bake at 350 degrees for 45 minutes.
