Tender Crisp Sugar Cookies

1 cup butter
1 cup Crisco
1 cup white sugar
1 cup powdered sugar
3 teaspoons vanilla
2 eggs

Place in mixer and add the following dry mixture:

4 1/2 cups flour
1 teaspoon cream of tartar
1 teaspoon soda

Drop by teaspoon and flatten with glass dipped in sugar.  Bake 10 minutes at 350 degrees.

Whole Wheat Bread

"This is my sister Carma's recipe, and it makes some of the best bread I've ever tasted."

8 cups whole wheat flour
1 cups white flour
2 quarts potato water
1/2 cup honey
5 T molasses
1 cup oil
3 T salt
4 T yeast

Mix everything but white flour and let set 10 minutes.  Mix for 10 minutes and then add white flour.  Let raise twice, then bake at 350 degrees for 35 minutes.

Monterey Pinto Salad

"I'm always looking for different salads--especially in the summer!  I use it for a meat substitute quite often."

Combine;
1 15 oz can pinto beans, drained
4 oz Monterey Jack, cut into 1 x 1/4 x 1/4" strips
1/3 - 1/2 cup sliced celery

Toss lightly.

In separate bowl, combine:

1/2 cup picante sauce
2 T vegetable oil
3 tsp red wine vinegar

Pour over bean mixture, toss lightly, cover and chill.  To serve, arrange on lettuce leaf, garnish with avocado slices and sprinkle crisply cooked bacon on top.  May also add additiona picante sauce.  Makes 4 cups of salad.

Waffles

Makes 8 waffles

2 cups sifted flour
1/2 tsp salt
4 tsp baking powder
3 eggs
2 cups milk
1/2 cup shortening (butter is better)

Preheat waffle iron.  Sift flour, salt and baking powder into large bowl.   Beat eggs until foamy. Blend in milk; add shortening.  Add liquid ingredients to flour mixture; beat with rotary beater until smooth.

Pour batter onto center of waffle iron.  Batter should spread to within one inch from edge.  Baking until steaking stops and waffle is golden brown.  Loose edge with fork.

Serve hot with syrup, confectioners sugar or ice cream.

"I double this and freeze them.  So handy to have in a hurry for company.  Grandchildren love them."

Special toppings for waffles:

Blend soft butter with:
  • grated orange rind
  • well-drained pineapple
  • crushed strawberries
  • maple syrup or honey
Canned blueberries, seasoned with cinnamon, thickened with a little cornstarch is also yummy.
