Baking Powder Biscuits

Heat oven to 425 degrees. 

4 cups flour
1 cup shortening
1 tsp salt
2 eggs, beaten
1 T sugar
1 1/2 cups milk
5 tsp baking powder

Combine flour, salt, sugar and baking powder in a large bowl. Cut in shortening. Mix eggs and milk together and add to flour mixture. Dough will be sticky. Knead lightly on a floured surface about 20 times. Roll and cut. Bake 10 minutes until light brown.  Makes 2 dozen

Biscuit Mix

6 cups flour
3/4 cup dry milk
1 cup Crisco
1 T salt
3 T baking powder

Mix all together by hand. Keep on pantry shelf.

To make biscuits, add enough water to enough flour to make a soft dough. Knead lightly. Roll and cut. Bake about 20 minutes at 400 degrees.

Good Baking Powder Biscuits

2 cups flour
4 tsp baking powder
1/2 cream of tartar
1 T sugar
1/2 cup Crisco
2/3 cup buttermilk
1 beaten egg

Blend Crisco into dry ingredients; add buttermilk and egg. Mix, then knead lightly. Roll and cut. Bake at 400 degrees for 20 minutes.

Biscuits

2 cups flour
2 T sugar
4 tsp baking powder
1/2 tsp salt
1/2 tsp cream of tartar
1/3 cup oil
2 egg whites, beaten until frothy
2/3 cup skim milk

Mix dry ingredients. add everything else. Put cooking spray on board, shape in a circle, patting until dough is about 1/2" thick. Use a washed cooking spray lid to cut out dough. Put in a pan that has been sprayed with cooking spray. Bake at 350 degrees until lightly browned.

Sky High Biscuits

2 cups flour
1 cup whole wheat flour
4 1/2 tsp baking powder
2 T sugar
1/2 tsp salt
3/4 tsp cream of tartar
3/4 cup margarine
1 egg, beaten
1 cup milk

Combine flour, baking powder, sugar, salt and cream of tartar. Cut in butter until mixture resembles cornmeal. Add egg and milk, stirring quickly. Knead lightly on floured board. Roll or pat into 1" thickness. cut into 1-2" biscuits. Place in creased cookie sheet. 

Bake at 450 degrees for 12-15 minutes.  Yields 20 biscuits.

Baking Powder Biscuits

Mix and sift together:

2 cups flour
4 tsp baking powder
1/2 tsp salt

Add 4 T butter or lard.

Work it in with a fork until it's perfectly blended and the flour is flaky.  Make a well in the center of the flour and pour in 3/4 cup milk or water.  Start in the center and stir with a fork, in widening circles, until all the flour has been gathered in and the result is soft dough.  Turn the dough on the floured board and roll lightly about 1" thick.  Cut with biscuit cutter.  Bake 12-15 minutes in hot oven.
