Jan Asay's Salad

"When Enid was ill, Shirley Busteed brought this over. It was delicious; we still use it a lot."

lettuce
fresh spinach
red leaf lettuce
red onion
mushrooms
grated cheese
1/2 lb bacon pieces

You can make any kind of salad but this dressing is outstanding.

3/4 cup red wine vinegar
1 T poppy seed
1/2 cup oil
1 tsp dry mustard
1 cup sugar
1 tsp salt
2 T finely chopped green pepper

Blend and shake well before using. I always make the dressing and keep in a bottle in the fridge and use as needed.

Chinese Stew

1 lb. hamburger
1 medium onion, chopped

Brown in a little bit of olive oil. Then add:

1 1/2 quarts water
3 carrots, diced
3 stalks celery, diced
1 quart tomatoes, blended

Season with salt, pepper and Accent. Then add:

1-14 oz. can chow mien vegetables
1 can water chestnuts

Simmer very slowly for about 1 hour so that flavors mix. That's all--it's not hard to make and tastes great on a cold day.

Carrot Cake

"My daughter Eva got this recipe from the cook who worked at the Deseret Gym in Salt Lake.  Whenever any of the General Authorities came to the gym to eat, it was their favorite."

2 cups sugar
1 tsp soda
1/4 tsp nutmeg
1 1/2 cups salad oil
2 cups flour
3 cups grated carrots
4 eggs
1 tsp cinnamon
1 tsp vanilla

Mix as listed.  Bake in 10 x 13" pan at 350 degrees for 30-40 minutes.

Icing:

1/2 cup margarine
4 oz. cream cheese
1 tsp vanilla
1/2 package powdered sugar
salt to taste

Microwave Quick Treat

1-7 oz package butterscotch chips
1 cup margarine

Melt on high for 30 seconds.  Add 1 package mini-marshmallows.  Stir.  Melt on high for 1 minute.  Stir.  Melt again.  Mix until smooth.  Add 1 box Rice Krispies.  Spread in large cookie sheet.

Devil's Food Cake

"This recipe was given to me when I was a bride by Artie Welling Farthing.  It's still my family's favorite cake."

1 1/2 cups sugar
8 T cocoa
1 cup sour milk
1/2 cup shortening
2 cups flour
1 cup boiling water
2 eggs
salt
2 tsp soda

Cream shortening and sugar, add eggs.  Alternate dry ingredients with sour milk.  Last, add soda to boiling water and add to cake.  Bake at 350 degrees for 35 to 40 minutes in a 10 x 13" pan.

Oreo Torte

Place crushed Oreo cookies on bottom of cake pan.  Spoon softened 1/2 gallon of vanilla or butter pecan ice cream over cookies.  Put into freezer to harden.

Make chocolate sauce of:
4 squares baking chocolate
1 cup sugar
1 1/4 cups evaporated milk

Stir and cook over low heat until thickened.  Let cool.

After ice cream sets and chocolate is cooled, put sauce over ice cream.  Replace in freezer and let set.  Last layer is a tub of Cool Whip, with grated chocolate sprinkled on top.

Chicken and Broccoli Casserole

4 lbs chicken
16 oz. cream cheese
1 cup half and half
1 cup milk
1 cup parmesan cheese
1 package frozen chopped broccoli

Cook chicken and bone and pull into nice pieces.  Cook broccoli.  Mix cream cheese, milk and half and half and cook over low heat until thickened.  Put broccoli in 9 x 12" pan, layer with 1/2 sauce, 1/2 cheese, all chicken, rest of sauce, rest of cheese.  Dust with paprika.  Bake at 350 degrees for 30 minutes.  Do not overbake.  Let stand 5 minutes before serving.

Gabby's Pork Chops

6-3/4 center cut pork chops

Rub with garlic, then brown over high heat.

Put in shaker and hsake well:

1 cup brown sugar
1/2 cup orange juice
2 T prepared mustard
1/2 cup honey
granted nutmeg
ground cloves

Put 1/2 of sauce over browned chops and bake at 350 degrees for 40-45 minutes.  Baste with rest of sauce.
