Orange Sherbet Salad

2002 Cowley Cookbook

1 large package orange jello
2 cups boiling water
1 pink orange sherbet
2 cans mandarin oranges
1 can crushed pineapple

Combine all ingredients in order given. Pour into 9x12" pan.  Place in fridge until set.

Spinach Dip

1/2 cup mayonnaise
2 cups sour cream
1 package spinach, thawed and uncooked
1 can water chestnuts
1 package Knorr's vegetable soup

Mix together. Place in scooped-out French bread bowl.  Use bread for dipping.

Mexican Wedding Cake

1 cup creamed butter
3/4 cup powdered sugar
2  cups sifted flour
1 tsp vanilla
1 cup nuts

Mix well and mold in small balls.  Bake at 350 degrees for 15 minutes.  Cool and roll in powdered sugar.

Vanilla Cookies

Mix together:

3/4 cup sugar
3/4 cup Crisco
2 eggs
1 1/2 cups flour
1/2 tsp soda
salt
1 tsp vanilla

Bake at 350 degrees for 10 minutes.

Chocolate Chip Cookies

"This is not only a favorite in the Ellis home, but also in the neighbors' homes!"

1 cup Crisco
1/2 cup sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
2 cups + 4 T flour
1 tsp soda
1 tsp salt
chocolate chips

Drop by teaspoonfuls onto cookie sheet.  Bake at 375 degrees for 10 minutes.

Pineapple Upside Down Cake

1/2 cup Crisco
1 cup sugar
2 egg yolks
1/2 tsp vanilla
1 1/2 cup flour
1/8 tsp salt
1 tsp baking powder
1/4 tsp soda
2 beaten egg whites
1/2 cup pineapple syrup
1/4 cup hot water
1 can pineapple
1 bottle cherries

Cream Crisco and sugar.  Add yolks and vanilla.  Beat well.  Add sifted dry ingredients with juice and water.  Fold in egg whites.  Melt in skillet 1/2 cup butter.  Ad 1 cup brown sugar and cool.  Add pineapple and cherries in skillet.  Pour cake batter over it and bake at 350 degrees for 45 minutes.

Layered Taco Salad

1 lb hamburger
1 pkg taco seasoning
8 oz cream cheese
8 oz sour cream
1/2 head lettuce
1 chopped green pepper
1 large chopped tomato
1/2 chopped onion
chopped black olives
3/4 lb shredded cheese
tortilla chips

Brown hamburger and 1/2 taco seasoning mix.  Drain.  Mix cream cheese and sour cream with other 1/2 of seasoning ix.  On serving dish place thin layer of lettuce.  Spread cream cheese mixture on as evenly as possible.  Layer pepper, tomato, onion, olives and cheese.  Serve with tortilla chips.  DELICIOUS!

Corn Dogs

"A quick, delicious meal--teenagers love 'em!"

2 beat eggs
1 cup milk
1/2 tsp salt
1/2 cup sugar
2 cups flour
2 tsp baking powder

Mix and let stand 1/2 hour.  Insert corn dog sticks 1 1/2" into weiners.  Dip into batter and deep fat fry!
