Farmer's Breakfast

"For someone with a hearty appetite."

4 medium potatoes, boiled, cooled and sliced with peels on
4 strips bacon, cubed and fried until crisp

In large fry pan in which bacon has been cooked, brown potato slices.  Add mixture of:

3 eggs, beaten
3 T milk
1/2 tsp salt
1 cup cubed cooked ham
2 medium tomatoes

Do not stir; cook until eggs are set.  Sprinkle with 1 tablespoon chopped chives.
