Zucchini Bread

"Frankie Cozzens brought me the recipe and the ground zucchini.  How's that for a good friend?"

2 cups sugar
1 cup oil
1 tsp salt
3 cups flour
2 cups unpeeled, ground zucchini
3 eggs
1 1/2 tsp cinnamon
1 tsp vanilla

1/4 tsp baking powder
1/2 cup nuts

Combine and bake 60-75 minutes at 375 degrees.
