Fry Bread

2002 Cowley Cookbook

Single Batch:

1 T yeast
1/8 cup sugar
1 1/2 tsp salt
3 to 3 1/2 cups flour
1 1/2 cups warm water
1/8 cup oil

Double Batch:

2 T yeast
1/4 cup sugar
1 T salt
6 1/2 to 7 cups flour
3 cups warm water
1/4 cup oil

I use Saf instant dry yeast; mixes right in with dry ingredients--do not have to mix separately with water first--so easy! I store in freezer in jar and take out as I need it. When mixed, form in small balls, then flatten in hands to make circles. Fry immediately on both sides. Dough does not have to rise first.
