Zucchini Squash Bread

Beat 3 eggs until light and foamy.  Add:

1 cup oil
2 cups grated zucchini (peel too)
3 tsp vanilla
2 cups guar

Mix lightly but well.  Add:

3 cups flour
1 tsp soda
1/4 tsp baking powder
1 tsp salt
2 tsp cinnamon

Mix until blended.  Add 1/2 cup chopped nuts.  Pour into greased pan.  Bake at 325 degrees for 1 hour or until done.  (Makes 2 loaves.)
